<p>Muito além de uma bebida, reconhece-se o vinho como alimento dotado de importantes propriedades nutricionais e também terapêuticas, além de inquestionável protagonista nos contextos histórico, social, econômico e religioso. Este curso pretende difundir os principais fundamentos da microbiologia enológica: fermentações, aspectos de micro-ecologia, controle, alterações organolépticas, manutenção e estocagem. Por outro lado, estudaremos os fundamentos da análise sensorial como ferramenta de reconhecimento e discriminação das características organolépticas do vinho.</p>

<p>Gozalo Gonzalo e Antonio Palacios desenvolvem um trabalho pioneiro em La Rioja (Espanha) junto a Universidad de La Rioja. O metodo de elaboracao sensorial baseia-se no fato de que pessoas cegas e bem treinadas podem intuir notas aromaticas que aparecerao no vinho varios dias antes de que sejam perceptiveis.</p>
<p>Assim, e possivel detectar certas caracteristicas nos primeiros estagios e conhecer os aromas finais. Uma vez feita a identificacao dos aromas iniciais por cegos a niveis ultra-baixos e possivel atuar no processo de vinificacao, potencializando rotas que desencadeiam a aparicao de aromas positivos e inibindo possiveis desvios organolepticos.</p>

<p class="MsoNormal" style="text-align:justify;margin:0;"><span style="color:#333333;"><strong><span style="font-weight:normal;font-size:10pt;font-family:Arial;">Promovido pela Vino Press, editora que detém a marca Vinho Magazine, o concurso reuniu cerca de </span></strong><span style="font-size:10pt;font-family:Arial;">6 mil amostras, provenientes de 47 países. 230 degustadores de 40 nacionalidades diferentes tiveram a responsabilidade de avaliar e definir os vencedores. Destaque para a participação predominante de jornalistas da imprensa especializada que atuaram como degustadores.</span></span></p>

<p class="MsoNormal" style="text-align:justify;margin:0;"><span style="font-size:10pt;font-family:Arial;"><span style="color:#333333;">Representando o Brasil, o enólogo e vice-presidente da Associação Brasileira de Enologia (ABE), Christian Bernardi, além de Eduardo Viotti e Jorge Carrara, de São Paulo. <span> </span>De acordo com Bernardi, o Concurso de Buxellas impressiona, principalmente, pelo número de amostras e de pessoas envolvidas, sendo considerado um dos maiores concursos internacionais do gênero. Além disso, ele destaca que a participação dos vinhos brasileiros e as premiações conquistadas em um renomado concurso como este, demonstram a qualidade da bebida nacional e confirmam a valorização dos vinhos e espumantes do Brasil nos mais respeitados certames internacionais.</span></span></p>
